Research/Inspiration: I go to the Googs for most things. This time this is from The Mediterranean Dish.

🤷♀️ It's a 9x13 pan and I'm alone so I ate it over the course of a few days.

If I'm going to actually make this a thing, I may take multiple photos of the process. But also, I want to eat the food not stage it 😋 In the vein of Adele: I make food for bellies, not for eyes.
Also, I tried Trader Joe's Dolmas alongside these and they were from a can so what should I have expected??

- 1 lb phyllo/filo dough
- Olive Oil (1/4 cup but you may need more/less)
- 10-16 oz spinach (that leftover bag will be fine)
- 10 oz Violife cheese (honestly all are decent so pick your preferred)
- 1 medium onion (or the amounts of onion you can cut off without crying too much) - chopped finely (or pulvarized)
- 2 cloves garlic
- seasoning as needed (and other ingredients? I'm basic.
- Love and dinosaur laughs.

Process:
Filling
- Combine spinach, cheese, onion, garlic, and all other fun things you want in bowl. Toss 'em all in.
- Set aside.
- Grease the pan with olive oil.
- Layer down 2 sheets of phyllo dough and brush sheets with olive oil. Repeat using half of dough your sheets (this may be one tube from pre-packaged dough). Dough will likely be longer than pan so fold edges over layer as needed.
- Spread filling into pan and evenly distribute it.
- Layer remaining phyllo dough, 2 at a time and brushing with olive oil again. You will brush the top layer.
- Cut pastry into shapes (squares, triangles, dinosaurs, etc.). Be cautious of knives scratching pans (using my new ceramic friend here).
- Bake at 325 degrees Fahrenheit for 1 hour. Serve and enjoy! (careful, it's hot!)
